I’m Allergic to Gluten



Wow, talk about a huge breakthrough in learning about my body! Yesterday I found out that I am indeed allergic to gluten. When I consume it I suffer from chronic fatigue. This was quite a blow to me because I am a bread lover and am addicted to carbs.

Now I am trying to adapt and find ways to be Gluten Free. With my birthday coming up I was able to find a Gluten Free Cake Mix that I am pretty excited to try.

I also picked up some more gluten free foods including: Organic Millet Rice Flakes Cereal, Organic Chocolate Chunk Cookies (for the kids school lunches), Gluten Free Ranch Dressing, Organic Ketchup, Organic Gluten Free Oatmeal and a few more fun foods.

I have never been on a gluten free diet before and am really curious as to how much better I am going to feel on it. I wonder if my allergic reactions to the gluten were making it harder for me to lose weight. I hope I can shed the pounds a bit easier after eliminating wheat, barley and rye from my diet.

If you have Celiac Disease or are allergic to Gluten, what are your favorite foods? I need some meal ideas. This isn’t going to be easy considering the fact that I want to stay vegan as well so I need to get really creative here.

    Amy,
    Oh yes, you will start to feel better. By eliminating the gluten you have stopped poising your body. You should probably do a cleanse of some type to get your intestines cleaned out so they will work more efficiently.
    Eat plenty of fruits and vegetables as well.
    Pamelas pancake mix is the best. You can make waffles as well with the mix.
    Frequent a local health food store for their assistance as well. Read labels and welcome to your new Lifestyle of living. I dislike the diet word. It is a lifestyle change as is being vegan.
